UPDATED- Meal plan #20180129

Two weeks in a row for meal plan publishing! It’s either a trend or an anomaly, only time will tell.

  • Monday is our weekly friends dinner- if I’m not mistaken, we’be been going strong for more than 2 years now. We rotate hosting with five other families, and this week is one of those just-show-up-and-eat Mondays.
  • Tuesday Teriyaki chicken with rice and broccoli. If I don’t make this every few weeks the young ones riot. I’ll be making an extra large batch of rice to have leftovers for tomorrow’s dinner. Nope, the chicken wasn’t thawed in time so I just made cheeseburgers and green beans.
  • Wednesday Vegetarian burritos with black beans, rice, and all sorts roasted veggies, salsa, and rice. I’ll also pan fry them after assembly with a little bit of cooking spray because browned burritos are the best burritos. Nope, jazzed up ramen with extra veggies.
  • Thursday Crockpot meatloaf, mashed potatoes, and green beans. Easy peasy. Teriyaki chicken with rice and broccoli. If I don’t make this every few weeks the young ones riot, and since it didn’t happen on Tuesday it has to happen now.
  • Friday Pho Ga is definitely happening, it’s been far too long. I’ll make a broth with Chicken Better Than Bullion and a bit of green curry paste (I prefer this one from Aroy D). I’ll blanch some fresh rice noodles, dish them into bowls of broth, then add broiled (then sliced) chicken thighs and let each creator go to town on their other additions. Garnish/ingredients to add will include chopped cilantro, sriracha, hoisin, chili garlic sauce,  and various-pre-cooked-veggies like broccoli, carrots, and red cabbage. Rescheduling for crockpot meatloaf, mashed potatoes, and green beans.

My goal for next week will be to find ONE recipe to follow for one of my weeknight meals. I have a tendency to smoosh together at least three different sources whenever I try something new, and still usually end up making a change or six depending on how things go.

UPDATED- Meal plan #20180122

It has been approximately 10,572 since I posted a meal plan. Here we go!

  • Monday is our weekly friends dinner. We rotate hosting with five other families, so I have to cook a huge meal about once a month on a Monday, and the rest of the time I just go show up at a friends house and get to eat. We have a shared calendar to keep track of where to go, and this week is one of those just-show-up-and-eat Mondays. I’m pretty psyched. UPDATE: we got a ton of snow, so I picked up the kids at 3PM and we stayed home shoveling rather than venturing out for dinner with friends. We rewarded ourselves for shoveling with plenty of hot cocoa, then had pizza, apple slices, nachos with leftover chicken for dinner at home. There ended up being more than a foot of snow, and some school buses in St. Paul were still dropping off kids at 11PM. It was nuts!
  • Tuesday UPDATE- There was no school so we hung out, built snow forts, and had a great time. Dinner plans stayed the same and as promised we had cheeseburgers. Mine was  loaded up with sauteed mushrooms & shallots, mozzarella cheese, parmesan, and marinara. The kid had cheddar cheese, ketchup, and sweet chili sauce. Fries and Caesar salad on the side in memory of trips to The Convention Grill.
  • Wednesday Coconut curry chicken with veggies! I use this green curry paste from Arroy D and serve it over rice. Please note: chicken thighs are a must for this dish. Please also note: there will be cauliflower, broccoli, carrots, snow peas, green onions, and cilantro too. This is my absolute favorite type of leftovers, so I’ll be making a huge batch.
  • Thursday Baked fish with lemon pepper/garlic/butter sauce- I bake thawed fillets with the sauce on top in a pyrex dish at 350 for 10-15 minutes. The time is a guess, I just check to see if they’re done and cooked through while I do other stuff in the kitchen. Served with plenty of lemon slices at the table, green beans and garlic bread on the side.
  • Friday we have the day off! As long as they make snow at Afton Alps, we are going with the snowboarding/skiing club from Capitol Hill. There’s a 75% chance of us going to Culvers or Snuffy’s for dinner that night, and a 25% chance that I’ll make Calzones at home for dinner.

So there it is! As always, this menu is not contractually binding and will be changed at my discretion. At some point next weekend I’d also like to make some pie, but I’m not quite ready to commit to getting it done.

Meal Plan #20160425

Spring has officially sprung, and the week is supposed to be cool and/or rainy. To warm up the house and not go completely stir crazy, I have a few extra cooking projects planned.

  • Monday Cheeseburgers, veggies, ice cream sandwiches for dessert.
    • I’ll also be making some kind of vegetable beef soup for lunches this week.
  • Tuesday Friendsdinner! Each Tuesday a group of friends and I rotate hosting dinner. This week is not my night to host, and not my night to cook.
  • Wednesday Pasta with smoked sausage, peppers and onions in a faux arrabiata sauce (plenty of garlic and red bell peppers cooked in butter with a hefty dose of red pepper flakes, plus store bought marinara).  Broccoli on the side.
  • Thursday Breakfast for dinner- I’m trying a new pancake recipe, and serving it up with bacon, fresh fruit, and soft scrambled eggs with spinach. {UPDATE: I didn’t get the pancake batter made in time, so we did french toast instead}
    • I’ll be out of soup at this point, and will make up some fresh spring rolls for Friday’s lunch. Quick pickled cucumbers, carrots and red onion, chicken, rice noodles with plenty of mint and cilantro, wrapped up in romaine lettuce and rice paper.
  • Friday Stir fried noodles & veggies, chicken skewers (kind of like this recipe but with extra turmeric and ginger in the chicken marinade), lots of broccoli, and dumplings.
  • Weekend:
    • Saturday breakfast will be french toast {UPDATE: I have not one, but *two* new waffle irons, so it’s going to be a waffle-palooza! I’ll make my classic buttermilk waffles AND sweet potato hash browns. I also really want to try mashed potato waffles at some point, but probably not until I already have leftover mashed potatoes}, smoked sausage, and fruit.
    • Lunch to go: spring time and/or summer wardrobe refresh for the kids, they’re both growing extra fast and wearing holes in pants. We’ll pack up a cooler with drinks, sandwiches and veggies.
    • Yard. Work. It’s going to take up quite a bit of our weekend time.
    • Meatloaf will happen. More soups will likely happen. Hopefully other baking will also happen.

Meal Plan #20160314

The Internet is trying to convince me that today is “rounded pi” day, because it’s 3/14/16. Pi rounded to the nearest ten-thousandth is not enough to make me make a real pie on a Monday, sorry family. Perhaps I’ll make a rectangle of apple crisp in protest.

  • Monday Pasta night! Tortellini, smoked beef sausage, peppers & onion in tomato sauce with a kick. Asparagus and garlic bread on the side.
  • Tuesday Friendsdinner, and not my night to cook. Wahoo!
  • Wednesday Chicken/veggie/noodle stir fry, with broiled shrimp on the side. Veggie burritos!
  • Thursday Crockpot meatloaf, gravy, mashed potatoes, green beans, with plenty of crusty bread on the side. This was vetoed since I didn’t get to the stirfry, so this was when the chicken/veggie/noodle stir fry and broiled shrimp happened.
  • Friday Every third Friday, it’s The Gathering at ARTS-Us, which is my son’s after school program. This month, it’s a quiet little potluck with the families. Other times it’s a bigger shebang with partner organizations.

The new Saturday plan

Newsflash! Update!

I haven’t figured out how I want to update previous posts yet, so let’s do a whole new post. Cool? Cool. I’m glad we had this talk.

Yesterday, I unintentionally undermined date night. The Man and I were supposed to have an evening together, but I forgot and agreed to have the boys over Saturday night. I mean, how could you possibly keep your normal plans when you could have more of this in your life?

They’re nerds. And I love it. Now, I’m planning our extended time together! I told The Man, and he was surprisingly not mad at all. He suggested yard camping with our boys. Usually they get picked up around 3:30PM, so having the whole day gives us a lot more freedom.

So! Here is our tentative Saturday agenda:

    • Breakfast: Pancakes, and savory sausage french toast, and fruit, oh my!
    • Tent set up- because we’re camping in our back yard Saturday night. Shenanigans are highly likely.
    • Lunch: Cheeseburgers on homemade buns, with fruit & veggies of some sort.
    • Afternoon Extravaganza! First we head to Sea Life at the Mall of America, where we have a year long pass. Then, if we can get away without going to LegoLand, we’ll have indoor play time at Adventure Peak.
    • Dinner: I’m not sure yet. Maybe brats? Maybe roasting marshmallows for dessert? I’ll report back next week.
    • Evening: Yard camping! Yee haw! So far it looks like the weather will cooperate. I don’t plan on telling the boys, on the off chance that we get rained out. We’re not especially hard core about yard camping through the rain.

So that’s it! The entire update! Sunday morning will be cold cereal, then church. I’m excited for the weekend now, so that should make the week fly by. What kind of weekend plans do you get excited about?
